Introducing! - Pootharekulu - Exotic sweet from India !!! Pootharekulu is made from a particular kind of rice batter called jaya biyyam ('biyyam' meaning rice), combined with powdered sugar and ghee (clarified butter). To make the edible film a hot pot is prepared. To make the pot suitable, a hole is made in it and it is alternately heated and wiped with a cloth dipped in oil for three days to smoothen the surface. To make the films, coarse rice is ground for nearly two hours and made into batter. This is then diluted, a thin cloth is dipped in the solution and it is put on the inverted pot with flame under it. The edible film forms on the pot instantly. The edible film is then wrapped with sugar/jaggery and coated with ghee.

THE (HI!)STORY OF IDIYAPPAM!!!! Idiyappam - steamed rice string hoppers....per the renowned food historian K.T. Acharya, these idiyappams alias sevai have their origins prior to the sangam literary period (300 BC - 300 AD). Traditionally, they were and still are served with sweetened coconut milk spiked with cardamom or with a stew (stew is any dish that has several solid pieces of food material that are simmered and cooked in a liquid). In southern parts of Tamil Nadu, they call this vegetable stew as “sodhi”, while across the border, the Keralites borrowed the name from the French/Portuguese traders calling it “ishtu”, which is currently a staple in the Malayalee household.
